Turkey Sausage, Egg & Cheese English Muffin (High Protein)

The humble sausage egg and cheese is a great breakfast. This version is a little healthier by making our sausage with lean ground turkey and 100 calorie English muffin. I usually have 2 which makes a massive and very filling meal.

Ingredients

Turkey Breakfast Sausage ( 4 servings)

  • 454 g (1 lb) 93/7 Ground Turkey

  • 6 g Salt

  • 1 Garlic clove, ground

  • 1 tsp ground Sage

  • 15 cranks Black Pepper

  • 1 clove, ground

  • 1/2 tsp dried Thyme

  • 1/2 tsp Fennel Seed

Serve With

  • Multigrain English Muffin

  • 1 scrambled Egg

  • 1/2 slice of American cheese

  • Ketchup

Instructions

  1. To start, set a pound of ground turkey over a scale, and in your sausage seasonings, grated clove, grated garlic, sage, thyme, fennel seeds, and black pepper.

  2. For cooking, get two (or 4) quarter lb balls which we will be smashing in the skillet.

  3. To cook, set a skillet over medium-high heat and add a spritz of oil to the spatula. Once ripping hot, drop the meatballs in and let cook for just 20 seconds before flipping over and smashing. Let that cook so the crust can develop as best as it can.

  4. Once the sausages are cooked, lastly, add a drizzle of the maple syrup, which provides a bit of sweetness and will kind of caramelize around those edges.

  5. For our eggs, turn the heat to low and add just a half tablespoon or 7 grams of butter.

  6. Once melted, add in the eggs and lightly scramble until just slightly underdone. Form the eggs into two piles and add some black pepper over the top before taking off the heat.

  7. To assemble the sandwiches, add a little drizzle of ketchup before adding the sausage pattie, the egg, and finally half a slice of cheese.

  8. Throw these under the broiler for 30 seconds until the cheese melts.
