(Healthier) Chicken White Cheddar Mac & Cheese
Are you looking for a healthy, weeknight version of Mac & Cheese that actually tastes good? This is the white cheddar mac base you need to learn. Add in a healthy dose of lean protein and veg to bulk it up.
Ingredients
White Cheddar Mac Base (2 servings)
30 g (2 tbsp) white cheddar powder
30 ml (2 tbsp) nonfat milk
30 g (2 tbsp) low-fat sour cream
171 g (~1/3 lb) dried pasta of Choice
Kosher salt to taste
Optional Add-Ins
150 g (~1/3 lb) grilled chicken or protein of choice
89 g (~1/2 cup) frozen peas or vegetable of choice
Instructions
Cook the pasta: In a saucepot or wide pan, barely submerge the dried pasta with water and add a sprinkle of salt. Boil until most of the water has been absorbed by the pasta, and the pasta is al dente.
Sauce the pasta: Turn off the heat. Add the cheddar powder, milk, and sour cream and stir until creamy.
Add-ins & serve: Stir in peas & chicken until warmed through and serve.
Notes & Variations
Use whatever protein, greens, or pasta you have on hand!
If you don’t have white cheddar powder, you can stir in grated cheese over low heat so it doesn’t become stringy.
