Crispy Garlic-Rosemary Pasta (with any braised meat)

If you have some braised meat around, you can level up your weeknight pasta with this technique.

Ingredients

Crispy Meat Topping

  • Braised Meat

  • Fresh rosemary, minced

  • Clove of garlic, minced

  • Cooking oil

Instructions

  1. Crisp the beef: Set a pan over medium heat with a little squirt of oil. Toss in the garlic and rosemary to toast for 30 seconds before adding the beef. Mix the two together, and then I just spread the beef into a thin layer to let the fat render and fully crisp it. Set aside.

  2. Sauce your pasta: Take your cooked pasta and integrate with your sauce in a pan until everything is warm and well coated.

  3. Plate & serve: Add a serving of pasta to a plate, then top with an extra spoonful of sauce from the pan, and finish with a generous layer of crispy garlic rosemary braised meat and grated Parmigiano Reggiano over top.
