Double Decker Taco (discontinued Taco Bell)

Ingredients

Double Decker Components:

  • Seasoned Beef (below)

  • Refried Beans (below)

  • 1 flour tortilla

  • 1 hard taco shell

  • Shredded Cheese

  • Sour Cream

  • Lettuce

  • Onion

  • Tomato

  • Hot sauce of choice

Seasoned Beef

  • 1 lb 80/20 ground beef

  • 5 g (1 tsp) Salt

  • 3 g (1 tsp) Garlic Powder

  • 3 g ( 1 tsp) Ground Cumin

  • 3 g (1 tsp) Chili Powder

  • 30 g (2 tbsp) Tomato Paste

  • Splash of water (if needed)

Refried Beans

  • 1 can of pinto beans

  • Drizzle of oil

  • 2 clove garlic, minced

  • 1/4 onion, diced

  • Salt to taste

  • Lime Juice to taste

Instructions

Step 1: Prepare the seasoned beef

To start, set a cast iron or skillet over very high heat. Once at 400 F, press the ground beeef flat down in the pan.

Add the salt and spices to the top of the beef and let it sit undisturbed while it browns on the bottom (meanwhile the beans can be started)

After 3 to 4 minutes break the beef up with a potato masher or spatula into little pebbly bits. Let cook for another 1-2 minutes.

Once cooked through, add the tomato paste and a splash of water to make it slightly saucey.

Taste it! Adjust spices, salt or tomato paste as needed.

Step 2: Prepare the refried beans

To start, set a pan over medium-high heat and add a drizzle of oil to the pan

Next, add the sliced garlic and cumin seeds. Let these toast for 60 seconds to flavor the oil.

Then, right before adding the beans, sprinkle in some smoked paprika. Follow this by adding one can of pinto beans, including the liquid.

Bring this mixture to a simmer and mash the beans with a fork or potato masher into your desired consistency. Let the beans cook for about 5 minutes until reduced and thickened slightly.

Step 3: Prep & assemble the double-decker taco

Chop the lettuce, tomatoes, and onion. Grate the cheese.

To assemble, lay down the flour tortilla and beans from edge to edge.

Prepare a hard-shell taco with the beef, cheese, sour cream, tomato, lettuce, and onion.

Wrap the bean flour tortilla around the hard shell taco and drizzle with hot sauce.
