Chicken & Tortilla Strip Salad

Ingredients

Salad Components

Chopped lettuce or greens of choice

Cherry tomatoes, halved

Tortilla strips (see below)

Cooked chicken breast, cubed

Avocado, cubed

Spicy vinaigrette or dressing of choice

Optional extras: grated cheese, cilantro, or chopped onions

Fried Tortilla Strips

  • Corn tortillas

  • Neutral frying oil (like peanut or vegetable)

  • Salt

Instructions

Fry the tortilla strips (if making): Add 1-2 inches of oil to a cooking vessel and bring to 350°F.

While that is heating up, stack tortillas and cut them into strips.

Add the strips to the hot oil and fry until crisp and golden brown, which should be when the bubbling mostly subsides (indicating the water has been evaporated out).

Add them to a baking sheet over a wire rack to drain with a sprinkle of salt.

Assemble the salad: Add lettuce to a bowl, followed by chopped tomatoes and tortilla strips. Next, add some chopped chicken breast, followed by avocado, cilantro, and onions. Lastly, sprinkle some cheese on top and drizzle with a spicy vinaigrette.
