Italian stir fry

Stir frying is an incredible technique, that is probably most synonymous with Chinese cuisine, but is used all over the world and if stripped down to it's basic cooking components it looks like this

  1. Hot oil

  2. Stir fry 'dry' seasoning (aromatics)

  3. Stir fry longer cooking items

  4. Stir fry shorter cooking items

  5. Stir fry 'wet' seasoning (sauces) - Optional

  6. Garnish (oil, herbs, aromatics, etc)

  1. Prep the chicken sausage, garlic cloves, asparagus, bell pepper, and red onion as mentioned.
  2. Set a wok or skillet over medium-high heat with a drizzle of olive oil. Once hot, add the garlic cloves and Calabrian chile for 15-20 seconds. Add the chicken sausage and cook until just starting to brown about 2-3 minutes. Add the asparagus, bell pepper, and onion along with a sprinkle of salt and the black pepper. Stir fry for 1-2 minutes.
  3. Turn off the heat, stir in the chiffonade basil. Serve with grated parm reg over top.
