High Protein Gochujang Noodles

Simple noodles for an easy weeknight dinner.

This is my favorite meal to make when I don’t have anything in the fridge. To make this higher protein instead of carb-heavy, the ramen noodles I use are from Vite Ramen. Check out the original video for more quick but healthy lunch ideas.

Ingredients

  • Noodles & egg

    • vite ramen
      1 pack
    • eggs
      1
    • cooking oil
      a drizzle
  • Gochujang sauce

    • gochujang
      10 g1 part
    • kewpie mayo
      5 g1/2 part
    • chinese black vinegar
      5 g1/2 part
  • For serving

    • scallions
      , thinly sliced
    • black sesame seeds

Method

Step 1: Boil the noodles

the noodles according to package directions, and drain.

Step 2: Mix the sauce & fry an egg

In a small bowl, mix together gochujang, mayo, and vinegar until smooth. Taste and adjust if needed.

a sunny side up egg to your desired doneness and set aside.

Step 3: Assemble & serve

In the noodle pot, mix together the drained noodles and the noodle sauce.

Add the noodles to a plate, and top it with a fried egg, sliced scallions, and black sesame seeds. Enjoy.
